Maille BBQ Mustard Rabbit
Ingredients
½ cup (125 ml) Maille Dijon Original Mustard
4 shallots, finely chopped
1 tsp (5 g) sea salt
1 tsp (2 g) black pepper
2 tbsp (6 g) chopped parsley
Nutmeg to taste
2 cloves, ground
1 tsp (2 g) dry Ginger, ground
2 tsp (2 g) fresh thyme, chopped
2 tbsp (6 g) dry tarragon
2 tbsp (30 ml) wine
¼ cup (60 ml) extra virgin olive oil
1 rabbit, cut into pieces
Preparation
Mix all the ingredients in a bowl.
Add the rabbit and marinate for a minimum of 12 hours (or overnight) in the refrigerator.
Grill over medium heat, basting regularly with the remaining marinade.
Cook until the rabbit meat is pink, about 20 to 30 minutes
